Recipe: Kale Citrus and Quinoa Salad

Celebrate National Women's Health Week with this nutritious and fiber rich kale and quinoa salad.

This nutrient-dense quinoa bowl celebrates National Women's Health Week with ingredients specifically chosen to support women's wellness. The dish features folate-rich kale and oranges—essential nutrients for women that help prevent anemia and reduce risks of heart disease. Protein-packed quinoa provides fiber that many women lack in their diets, while cruciferous vegetables offer additional health benefits.

Kale Citrus and Quinoa Salad

Ingredients

2-3 bunches kale, ribs removed, sliced into 1” strips

1 ½ cup cooked quinoa

¾ cup almond slices or chopped walnuts

6 oz. goat cheese, optional

4 oranges, zest reserved

2 ½ Tbsp. white wine vinegar

2 Tbsp. Dijon mustard

2 tsp. honey

Pinch of salt

Pinch of pepper

2 Tbsp. minced shallot

½ cup extra virgin olive oil

 

Directions

1. Place kale, quinoa, almonds or walnuts, and goat cheese (if using) in a large bowl.

2. After zesting the oranges, peel and slice into segments, or supreme the orange, over a small bowl to allow the juices to collect. Add segments to the kale.

3. To the bowl with the orange juice, add the white wine vinegar, Dijon mustard, honey, salt, pepper, and shallots.

4. Whisk to combine and continue whisking while slowly adding the olive oil.

5. Taste and adjust seasonings, mustard, vinegar, or olive oil until the desired taste is reached.

6. Add dressing to the salad bowl and toss to combine or leave on the side if preferred.
