From personalized weight loss plans to monthly healthy cooking inspiration, CU Medicine and the CU Anschutz Health and Wellness Center have teamed up to bring affordable and nutritious global cuisine recipes to people everywhere.
The cooking classes offered at CU Anschutz Health and Wellness Center are all centered around budget-friendly global cuisines. “Opting for budget-friendly vegetarian world cuisine for [most] of the cooking classes makes it accessible to a wider audience,” shares Anita Bancroft, RD, CC, who is the program manager for community nutrition at the center.

Recipe of the month
In an effort to promote health within our local community, CU Medicine has partnered with the CU Anschutz Health and Wellness Center to feature a monthly healthy recipe on the CU Medicine blog.
This "Recipe of the Month" provides readers with creative, nutritious recipe ideas that align with sound nutrition principles.
Whether attempting to lose weight, manage a chronic condition like diabetes or heart disease, or simply make healthier eating choices, the CU Medicine community can try out these vetted recipes in their own homes. The recipes demonstrate that healthy
food can also be delicious and enjoyable.
Inclusive cooking classes
For those looking to learn new cooking techniques or starting from scratch, the community nutrition team at CU Anschutz Health and Wellness Center has classes for everyone.
“It’s really about the connections, networking and sense of community that blossoms in a kitchen, says Bancroft. “We have a lot of people who leave our cooking classes say they met a new friend or that they met someone who they would
have never met because they are in a different program or school across campus.”
CU Eat Well – This program is a virtual or in-person cooking class exclusively for CU Anschutz students. In addition to acquiring basic cooking skills, students will learn how to make budget-friendly and delicious vegetarian recipes.

LAB Collaborative – Learning and Building (LAB) Collaborative is designed for CU Anschutz postdocs, professional research assistants, international scholars and PhD students. The classes are both offered online and in-person quarterly,

Fresh Take – The Fresh Take cooking demonstrations are open to the public and only available virtually. These classes are led by CU Anschutz Health and Wellness Center’s culinary educators and registered dietitians and feature
