Recipe: Baked Taro Root Chips

February is American Heart Month and we're bringing you a tasty homemade snack using Taro. Taro (also called eddo or dasheen is a starchy root vegetable with a brown outer skin and white flesh with purple specks. Taro is packed with fiber, potassium, antioxidants and more; all with great benefits for your heart health.

Taro

Taro has a sweet, nutty flavor. It is lower in moisture than potatoes, yielding a crispier result when fried or baked. 

Ingredients:

2 Taro roots (DO NOT CONSUME RAW)
2 tablespoons olive oil
1/2 teaspoon of salt

Instructions
1. Preheat the oven to 400 degrees Fahrenheit and arrange racks to divide oven into thirds.
2. Coat two large baking sheets with olive oil, using a pastry brush to spread evenly; set aside.
3. Remove the ends and peel the taro root with a vegetable peeler. Slice thinly (nearly translucent), about 1/16 of an inch and place in a medium bowl.
4. Add 2 tablespoons of olive oil and mix gently to coat.
5. Place slices on the prepared baking sheet in a single layer without any overlapping. Sprinkle Lightly with salt. Bake for 5 minutes. Rotate the pans between racks and bake for an additional 4 minutes. Remove from the oven once the taro chips start to turn golden brown.
6. Place baking sheets on wire cooling rack and season immediately with salt. Let the chips rest for 5 minutes and carefully transfer to serving dish.

Note: Best enjoyed day of baking
