Recipe: Grilled Pineapple with Yogurt

Our recipe of the month features a delightful twist on a tropical favorite: Grilled pineapple with yogurt.

This simple yet flavorful dish packs a nutritional punch, offering a hefty dose of vitamin C to boost immunity and potentially ward off heart disease and arthritis. Pineapple is also rich in manganese, essential for bone formation and contains B vitamins that aid in red blood cell production. The fruit's natural enzyme bromelain provides anti-inflammatory benefits, making this dessert as healthful as it is delicious. Ingredients

20 oz. can sliced pineapple in pineapple juice, drained and juice reserved

½ cup pineapple juice, reserved from can

1 star anise

2 cloves

1 vanilla bean, split

Olive oil spray

½ cup Plain Greek yogurt

Directions

1. To make light syrup: place juice, anise, cloves and vanilla bean into saucepan and bring to boil; simmer for 5 minutes

2. Heat grill* to medium heat and place pineapple on grill. Cook until lightly golden on both sides.

3. Serve with 1 teaspoon of syrup drizzled on pineapple slices; place pineapple on top of yogurt of using.
